JACKSON, Wyo. — Jackson’s newest food truck series “Mondays in May,” kicked off last week and will continue through the end of the summer.

Each Monday until Sept. 5, rotating food trucks will be serving dinner at May Park in East Jackson from 4:30 to 8:30 p.m. Last night, locals enjoyed eats from Pinky G’s and Streetfood at the Stagecoach.

“Mondays in May” is a new food truck series, created by Matt Donavan. With his special event permit, Donovan was permitted to have up to two food trucks in May Park between 4:30 p.m. and 8:30 p.m from Monday, June 13 through Monday, Sept. 5.

She's a lover of alliteration, easy-to-follow recipes and board games when everyone knows the rules. Her favorite aspect about living in the Tetons is the collective admiration that Wyomingites share for the land and the life that it sustains.
