JACKSON, Wyo. — The dining scene in Jackson Hole continues to evolve with creative offerings and revamps of longtime favorites.

Outdoor dining options have been on the rise in Jackson in recent years, especially during the COVID-19 pandemic, but as time has gone on, outdoor dining appears that it is here to stay.

Parklets are here to stay

The Jackson Town Council passed an ordinance this spring making the COVID-era parklets a permanent fixture during the summer season. Restaurants can now apply for a permit to use up to three parking spaces to create an outdoor dining space, June through October. A new rule also requires the parklets to be open to the public when the restaurant is closed, allowing folks to enjoy the space.

According to the Town, seven restaurants are currently at different stages of the application process.

Updated digs

A few familiar places have undergone renovations ahead of the summer.

Kampai

A new rooftop deck with a special condensed version of the menu is opening this summer at Kampai. The rooftop is a mix of indoor and outdoor spaces holding about 50 people with tables and booths, a seven-seat sake bar and pit tables. The indoor space has glass on three sides, to not hinder the views of Snow King and the Elk Refuge. The seating will be first-come, first-served and subject to weather.

Coelette

The new rooftop deck is set to open at Coelette on June 28 offering cocktails and bar snacks. The rooftop will be known as “1915,” a nod to the year the Coe cabin was built and the nineteen classic cocktails that will be served. The rotating cocktail menu will be different than the menu downstairs, with classics such as Bee Knees, Penicillin and Last Word. Half of the tables will be open for walk-ins and the other half will be for reservations.

Rooftop at the Cloudveil

A new layout on the rooftop this summer offers more seating, couches, fire pits and the option to reserve portions of the space for semi-private gatherings. The menu will change daily with pizzas, tacos, sliders, snacks, tartines and salads.

Melvin Taproom

When Roadhouse acquired Melvin, the Taproom in Alpine was also included in the deal. Pure Madness Group and Fine Dining Restaurant Group has revamped the indoor space, cocktail and food menu. The brewpub is open Wednesday-Sunday from 11 a.m. to 11 p.m.

Also under the umbrella of Pure Madness Group and Fine Dining Restaurant Group, Roadhouse Taqueria is housed in the downstairs space of the Roadhouse Pub & Eatery on the town square. The space was the old home of Starbucks. The new restaurant is counter service with grab-and-go options as well.

The Rose

Once known as the bar that stays open the latest, the Rose has changed hands and will reopen after being closed for nearly a year. The final show, The FUNeral was held on July 12, 2022, and the Rose “Revival” went down this past weekend with DJs Friday through Sunday and the revival of “J1 Night.”

Food Trucks

The public can expect to see a variety of food trucks at events throughout the summer but the list below shares the food trucks that are posting up all summer long.

Streetfood at JH Still Works and High Point Cider

Streetfood and Jackson Hole Still Works have joined forces to bring tacos to the south-of-town community. Every Tuesday this summer the Streetfood truck will be parked out front of JH Still Works serving up a condensed menu of tacos, churros, bowls and more from 11 a.m. to 7 p.m. Still Works, located just past the Ford Dealership on US 89, will be serving sloshies during the same hours.

The Streetfood food truck will also head over the pass to High Point Cider in Victor on Wednesdays from 5 to 8 p.m.

Mondays In May

Matt Donavan is bringing back the special event food truck series for its second summer. Mondays in May will feature food trucks at May Park every Monday, June 26 through September 11 from 5 to 9 p.m. This event is aimed at serving the East Jackson community. Biking, walking or any mode of transport other than a car is encouraged.

Powderhorn Food Trucks

Three food trucks will be at Powderhorn Park every Tuesday, June 27 through Sept. 12. Food trucks will be open from 5 to 9 p.m. This event is aimed at serving the mid-town Jackson community.

Owen Bircher Food Trucks

The food truck events close out the week on Wednesday in Wilson at Owen Bircher Park. Food trucks will be serving up dinner, June 28 through Sept.13 from 5 to 9 p.m.

Teton Village

Last summer’s popular pop-up CASA in the Caldera House will not be back for a second summer season but CORSA, which replaced Old Yellowstone Garage and opened in December 2022, will be open for its first summer.

Shin Shin Sushi is back at the Caldera House. Shin Shin originally opened in January 2022 but closed about two months later because the proper permitting was not secured. The restaurant reopened on June 7.

Restaurants we said goodbye to

This winter the health food restaurants took a hit.

Soluna Cafe and Cultivate Cafe closed their doors this past winter, amidst employee shortages and cost increases. Cultivate Cafe owners say they’d like to find a creative way to restructure for the future and Soluna Cafe says their closure is considered temporary.

Rations Eats, which was located in Basecamp in Wilson, closed its doors with two weeks’ notice on May 18. The Wilson eatery was open for lunch, weekdays only, 11 a.m. to 3 p.m.
