ALPINE, Wyo. — A spot with new dining options is nearly ready to open in Alpine for the summer.
The Alpine Food Truck Court is a family affair for Dave and Becky Walters, who have owned the property in downtown Alpine for a few years and have experimented with hosting food trucks in the past. The couple revamped the space with gravel, picnic tables, landscaping, lighting, tall fencing and space for four food trucks. Two new food trucks are preparing to open for the summer season, one serving Greek food, and one offering classics like hot dogs, burgers and sandwiches.
Dave Walters told Buckrail that they purchased and outfitted two food truck trailers and leased them out to local food truck entrepreneurs for the summer months. There is already a waitlist for potential future food trucks, but Walters wants to stick with two for now in order to gauge the success rate.
“We’ve installed sewer, water and electric for all the food trucks,” Walters said. “They could be brilliant chefs ready to serve some great food, but they just don’t have the capital to go buy a food truck or start their business that way. So it was nice being able to do it this way because it drew a lot of interest and we were able to pick out some great food options.”
Walters is looking forward to welcoming local families for the fresh, new dining options. He said customers can bring their dogs and they can bring their own beverages.
Samantha Espinoza with Red Rooster food truck will be slinging hot dogs, hamburgers and sandwiches. “Keeping it classic!” she told Buckrail.
“We are aiming for it to be pretty low-key and a spot you can enjoy with family or friends,” Espinoza said. “[We] are trying to figure out some live music events. This is still in the works but definitely something that I see happening in the future.”
Red Rooster plans to open to the public on Sunday, and will serve food every day during the summer. The food truck will be open Mondays through Fridays from 5 to 9 p.m., Saturdays and holidays from noon to 9 p.m., and Sundays from noon to 7 p.m. Owners of the Greek food truck did not respond to Buckrail by publication time. The Alpine Food Truck Court is located at 151 US89 in downtown Alpine.
