JACKSON, Wyo. — The rumors are true! Freshie’s Lobster Co. has a permanent summer home in Jackson Hole! This Independence Day Weekend you can find Freshie’s “World Famous” lobster rolls opening up shop inside Jackson Whole Grocer.

Freshie’s Lobster Co.’s claim to fame is its food truck. One of Jackson’s favorite food truck vendors at the Jackson Hole Farmers Market, it quickly became one of the main attractions for food options around town – with lines reaching over an hour wait just for a bite of the freshest Lobster Roll outside of Bar Harbor.

Now devoted fans can eat a “Shore-To-Door-In-24” Lobster Roll any day of the week from Freshies Lobster Co. station at Jackson Whole Grocer – July through September.

For the uninitiated, a true Maine lobster roll consists of a buttered and golden toasted split-top bun (this is essential) stuffed to the gills with lobster filling, which is seasoned with mayo, hot butter and a proprietary blend of spices. Just add a fresh squeeze of lemon with a side of crisp chips and you have a sweet meal of summer seaside perfection.

The owners of Freshies Lobster Co, a Park City foodie hot spot, are New England transplants who brought traditional Maine fare to the Rocky Mountains back in 2009. You can choose from their traditional lobster roll or have your lobster roll Spicy Style, served with Sriracha aioli, Mama Lil’s Peppers and chives. The crustacean-centric menu also boasts a variety of soups and gluten-free options.
