WYOMING — Brooks Lake Lodge & Spa will reopen for the winter season on Saturday, December 21, and be better than ever with new lunch menu items and holiday availability for locals to enjoy a memorable Christmas staycation.

Brooks Lake Lodge believes that the greatest holiday gifts don’t always come wrapped in red-and-green paper and tied with a bow; they come from sharing remarkable moments in memorable places with loved ones. The dedicated staff at the lodge aims to ensure that every guest that walks into their nearly 100-year-old lodge leaves with those lifelong memories, having created a deeper connection to loved ones and nature, especially during the holidays.

Picture a Christmas day snowmobile ride with an expert guide leading the way through snowy forests and up to mountain peaks with some of the most spectacular views around of untouched Wyoming wilderness. Or maybe a little exercise on snowshoes or cross-country skis exploring the scenic wilderness surrounding the remote mountain lodge while kids enjoy a day of extreme snow tubing. After a day in the snow, perhaps a long soak in the 11-by-17-foot hot tub overlooking the Pinnacle Buttes and Brooks Lake is in order – or maybe a hot stone massage before a well-earned Christmas feast.

And a feast it will be. Executive Chef Whitney Hall is offering an incredible holiday dinner menu for guests on December 25, starting with roasted acorn squash soup with a thyme and rosemary crème fraiche and toasted papitas as an appetizer, followed by an entrée choice of herb encrusted pork roast with a grilled apricot and cranberry chutney, steamed blue mussels with a curried sweet potato sauce, or caramelized onion tart with a warm roasted corn relish – and with sides including “roasted garlic melting potatoes” and creamed spinach. For dessert, Chef Whitney will prepare a scrumptious eggnog semifreddo with a gooey house-made shortbread.

Meanwhile with Brooks Lake Lodge’s opening day on December 21 comes the return of epic lunches available 11:30 a.m.–2 p.m. for visitors who travel to the lodge via snowmobile, fat bike or cross-country skis. It’s the perfect winter daytime excursion – locals love to travel the scenic five-mile road to the lodge for a well-earned hearty and delicious lunch. This year Chef Whitney has added a silver sage dip with green chilies, roasted corn, roasted tomatoes, a four-cheese blend and fry bread to the appetizers, an Elk Basin Sloppy Joe, homemade chicken noodle soup and, bringing back a crowd favorite, Fireball Apple Pie. Other returning favorites include the Sublette sandwich with house-made biscuit, breaded chicken breast, honey Sriracha aioli, pickled slaw, the Pintail Salad with Spinach, house-made balsamic bruschetta mixture, goat cheese, pretzel crostini, confit duck and the beloved deep-fried chocolate chip cookie dough. Go ahead, you earned it!
