JACKSON, Wyo. — After two sold-out wine dinners, Bin22 is bringing Australian wines to center stage for their Spring Wine Dinner. The April 22 dinner will feature multiple courses of wine from Legend Imports and paired dishes from the Bin22 culinary team.
The evening will begin with appetizers of Beausoleil oysters with creme fraiche, sturgeon caviar and shallot mignonette, Boursin stuffed peppadew peppers with prosciutto and balsamic, as well as octopus escabeche with saffron aleppo vinegar, cucumber, radish and jalapeño aioli on crostini. Four additional courses will continue the dinner, including items like seared scallops with roasted sunchoke puree, citrus riesling beurre blanc, trout row and crispy shallots and herb crusted lamb saddle with pinot noir cherry jus, grilled Morning Dew mushrooms and spring pea risotto.
